Introducing Platter's tasters: David Clarke

Starting out in fine wine retail in his native Melbourne, David moved to the UK and spent most of a two-year visa working at the Harrod's wine department in Knightsbridge.
Returning to Australia (with South African wife in tow), he made the move into restaurants where he worked and qualified as a sommelier. During the next five years, David worked mostly in degustation-only fine dining restaurants. Since 2011 he has been an adviser to the retail and hospitality industries.
Before arriving in South Africa in 2013, he was the executive officer for Sommeliers Australia (the sommeliers' association of Australia).
David was part of the selection panel for the Nederburg Auction 2013 and is currently sommelier at Burrata, Cape Town.
